The Man Behind the Meat
Chef Jamie Stachowski, known as the “Maestro of Meat,” brings a lifetime of culinary expertise and charcuterie tradition to every bite. A Buffalo native and James Beard Chef, Jamie's passion for butchery began at age 15. He honed his skills in classic European techniques and apprenticed under legends like Jean–Louis Palladin, before launching acclaimed restaurants and eventually founding Stachowski Meats.
A Family Tradition
Charcuterie runs deep in the Stachowski family. Today, Jamie works alongside his son and sister in Washington, D.C., crafting an extraordinary line of pâtés, galantines, terrines, and gourmet sausages — all rooted in generations-old family recipes.

From The Today Show to Somebody Feed Phil (Netflix, Season 7, Episode 5), Chef Jamie's creations have captured national attention. He’s also hosted Meat America on the History Channel, celebrating American food artisans across the country.
